For Kyiv, one of those moments comes in the evening, when the sun begins to descend, the light grows warmer, the Dnipro starts reflecting the gold of the sky, and familiar city silhouettes look completely different for just a few minutes.

That atmosphere became the starting point for Kyiv Golden Hour — the first cocktail in the signature “Entuziast — Cities of Ukraine” collection.

This is not an attempt to literally recreate Kyiv in a glass. We wanted to capture a feeling: warm evening light, restrained elegance, the depth of a great city and the calm presence of the river.

That is why the cocktail is built around aged Honey Spirit Entuziast, complemented by dry vermouth, a small amount of honey cordial and orange bitters.

Entuziast Signature Cocktails — Cities of Ukraine

Kyiv Golden Hour opens a new series of signature cocktails by Entuziast.

The idea is not simply to name cocktails after Ukrainian cities.

What interests us much more is trying to express the character of each city through the taste, aroma, colour, structure and presentation of a drink.

Kyiv, Lviv, Odesa, Dnipro, Kharkiv, Chernihiv, Uzhhorod and Kherson — each will have its own cocktail and its own story.

That is why the recipes in this collection are deliberately different.

In one city, coffee will take the lead; in another, sea freshness and citrus. Elsewhere, blackthorn, apple, ginger, herbs or flowers will define the character.

And we begin with the gold of Kyiv.

Why Golden Hour?

Golden hour is the term photographers use for the short period after sunrise or before sunset when the light becomes soft, warm and golden.

For our cocktail, it is the evening image that matters most.

Golden light above the Dnipro, old and modern architecture sharing the same cityscape, the trees covering Kyiv's hills and the warm reflections of the setting sun.

This image also suggested the colour of the cocktail — clear, golden and amber-toned.

But colour was only the beginning.

We needed a flavour that would be equally layered.

Why Aged Honey Spirit?

Kyiv Golden Hour needed a strong base spirit with a character of its own.

That is why we chose Honey Spirit Age Entuziast.

Aged honey distillate gives the cocktail depth, roundness and warmth — qualities that naturally fit the idea of the Golden Hour itself.

It is important to understand, however, that honey distillate is neither honey syrup nor a sweet liqueur.

Its role in this recipe is to serve as the true spirit base of the cocktail.

Kyiv Golden Hour Recipe

  • 50 ml aged Honey Spirit Entuziast;
  • 20 ml dry vermouth;
  • 5–7 ml light honey cordial;
  • 2 dashes orange bitters;
  • ice for stirring;
  • orange peel for aromatic garnish.

This is a short, spirit-forward cocktail. There are no juices, large amounts of soda or other ingredients intended to hide the base spirit.

Honey Spirit should remain the main character.

How to Make Kyiv Golden Hour

  1. Pre-chill a small cocktail glass or Nick & Nora glass.
  2. Fill a mixing glass with large ice cubes.
  3. Add 50 ml aged Honey Spirit Entuziast.
  4. Pour in 20 ml dry vermouth.
  5. Add 5–7 ml honey cordial.
  6. Add 2 dashes of orange bitters.
  7. Stir with a bar spoon for approximately 20 seconds.
  8. Strain into the well-chilled glass without ice.
  9. Express the essential oils from a piece of orange peel over the surface of the cocktail.

Why Stir Instead of Shake?

Kyiv Golden Hour contains no citrus juice, egg white or other ingredients that require vigorous shaking.

The goal is to chill the ingredients, combine them and introduce a controlled amount of dilution from the melting ice.

Stirring keeps the cocktail clear, smooth and visually clean.

That is especially important for Kyiv Golden Hour because its golden colour is part of the cocktail's identity.

Why Dry Vermouth?

It would have been easy to take the more obvious route and use sweet vermouth.

But the combination of an aged distillate and honey cordial could then become too rounded and sweet.

Dry vermouth works differently.

It introduces a wine base, herbal notes and a subtle dryness.

As a result, the cocktail remains elegant and relatively restrained.

What Is Honey Cordial?

In modern cocktail culture, a cordial is a concentrated flavour component that may combine sweetness, acidity and aroma.

For a homemade Kyiv Golden Hour, there is no need to prepare an elaborate bar cordial with a dozen ingredients.

A very simple base can be made from honey and water with a small amount of lemon or citric acid.

The aim is not to create obvious “honey sweetness,” but rather a subtle honey accent.

Simple Honey Cordial

  • 2 parts quality honey;
  • 1 part warm water;
  • a few drops of lemon juice or a small amount of food-grade citric acid.

Dissolve the honey completely in the warm water and allow the mixture to cool.

Add acidity very carefully.

The cordial should not turn into lemon syrup.

Why Use So Little Honey Cordial?

Because Kyiv Golden Hour is not intended to be a sweet honey cocktail.

Five to seven millilitres are enough to round out the structure and create a subtle aromatic bridge to the origins of Honey Spirit.

If you add 15–20 ml, the balance changes considerably.

The drink becomes sweeter, while the dry vermouth and the character of the aged distillate begin to move into the background.

Why Orange Bitters?

Orange naturally works well with aged spirits.

But we do not need orange juice here.

A few dashes of orange bitters introduce citrus bitterness, essential oils and spicy nuances without significantly changing the structure of the cocktail.

Here, orange works almost like an aromatic spice.

Why Not Add Orange Juice?

Because that would create an entirely different cocktail.

Juice would introduce considerable acidity, water, fruit sweetness and an opaque texture.

Kyiv Golden Hour is designed to remain clean and transparent.

The orange should appear primarily in the aroma — through bitters and the essential oils of the peel.

What Should Kyiv Golden Hour Taste Like?

The first sip is dry, warm and decidedly spirit-forward.

The aged Honey Spirit appears first.

Then come the wine and herbal notes of the dry vermouth.

The honey cordial gently rounds the edges but should never make the drink feel obviously sweet.

The finish brings orange bitterness, citrus oils and spice.

The aftertaste is long, slightly dry and warm.

How Strong Is This Cocktail?

Kyiv Golden Hour belongs to the family of spirit-forward cocktails — drinks in which the base spirit remains central to the flavour.

This is not a Highball or a Spritz.

It is not intended to be consumed in large sips.

The relatively small serving and slow drinking pace are deliberate parts of the concept.

Can Kyiv Golden Hour Be Served on Ice?

An alternative version can be served in a small Rocks glass over one large, clear ice cube.

In that format, the cocktail gradually changes as you drink it.

The ice slowly melts, reducing the concentration and making the flavour softer over time.

However, we still consider the chilled, ice-free presentation to be the original version.

Which Glass Should You Use?

A Nick & Nora glass is an excellent choice for this recipe.

Its small, elegant shape suits the character of the cocktail perfectly.

A small coupe can also work well.

There is no need for oversized glassware — Kyiv Golden Hour should look restrained and elegant.

How Should the Cocktail Be Garnished?

Minimally.

A thin piece of orange peel is enough.

Before serving, squeeze it gently above the glass to release the essential oils onto the surface of the drink.

The peel can then be placed on the rim or removed.

We would avoid berries, flowers, pieces of fruit or elaborate decorative constructions.

This cocktail has a different character.

Why Kyiv?

For the first cocktail in the collection, we wanted to begin not simply with the capital, but with an image that could be felt rather than merely explained.

Kyiv has many different faces.

It can be loud and fast, green and peaceful, historic and contemporary at the same time.

Yet there are moments when all those contrasts are briefly united by light.

The evening sun above the Dnipro, golden reflections, trees covering the hills, the silhouettes of bridges and the city itself — this is where the idea of Golden Hour began.

We did not try to turn Kyiv's architectural symbols into cocktail ingredients.

Instead, we started with a feeling.

Why Is the Cocktail Golden?

The colour comes naturally from the ingredients.

Aged Honey Spirit already has a warm tone.

A small amount of honey cordial reinforces the golden appearance, while the bitters can introduce a subtle amber nuance.

No colouring is necessary.

The colour should remain natural — just like the evening light that gave the cocktail its name.

When Is the Best Time to Serve Kyiv Golden Hour?

Of course, it can be prepared at any time.

But in terms of atmosphere, this is very much an evening cocktail.

It works well before dinner or as a slow drink at the beginning of a long evening.

And if you have the opportunity to enjoy it on a terrace during sunset, the concept becomes almost complete.

What Food Goes Well with Kyiv Golden Hour?

Because of its dry, spirit-forward character, overly sweet snacks are best avoided.

Aged cheeses, nuts, light cured meats, olives and moderately salty foods work particularly well.

Dishes with lightly caramelised or subtle smoky notes can also make an interesting pairing.

Kyiv Golden Hour or Honey Spirit Manhattan?

These cocktails have one important feature in common: aged Honey Spirit remains the principal alcoholic base in both.

Beyond that, however, they take different paths.

Honey Spirit Manhattan uses sweet red vermouth and aromatic bitters, giving it a richer wine character, more spice and a recognisably Manhattan-inspired profile.

Kyiv Golden Hour uses dry vermouth, a very small amount of honey cordial and orange bitters.

It is lighter in colour, drier and more citrus-aromatic.

How Is It Different from Honey Old Fashioned?

Honey Old Fashioned focuses even more strongly on the aged distillate itself.

In Golden Hour, vermouth becomes a full part of the composition, introducing an additional wine and botanical layer.

These two cocktails therefore demonstrate how differently the same base spirit can be used.

The First Cocktail on Our Map of Ukraine

Kyiv Golden Hour is only the beginning of the journey.

As the series moves from city to city, its character will change as well.

Lviv will bring a darker coffee mood. Odesa will introduce citrus, coolness and sea freshness. Dnipro will bring movement, apple, lime and ginger. Kharkiv will become a dry, geometric cocktail with an almost constructivist logic.

Each new recipe will be more than a variation of Kyiv Golden Hour. It will be an individual cocktail with its own structure and identity.
