Kherson Sun — A Signature Cocktail Inspired by Kherson
After the soft pink spring light of Uzhhorod, we wanted even more warmth.
Not gentle spring warmth.
Real southern warmth.
Bright, fruity and full of sunlight.
That is how Kherson Sun appeared — the eighth cocktail in the signature “ENTUZIAST — Cities of Ukraine” collection.
Its foundation is Honey Spirit Apple ENTUZIAST, complemented by apricot cordial, lemon and soda water.
The result is a pale golden-orange cocktail with an apple base, ripe fruit character and fresh citrus lift.
This is a drink about warmth.
About sunlight.
About the south.
Southern Character in a Glass
For Kherson, we did not want to create a heavy or overly complicated cocktail.
Quite the opposite.
Its personality had to feel open, warm and immediately understandable from the first sip.
But not simplistic.
That is why we built the recipe around three directions:
- apple;
- ripe stone fruit;
- fresh acidity.
Soda water adds lightness and turns the drink into a longer, more refreshing cocktail.
Why Honey Spirit Apple?
For this cocktail, we needed a fruity but not sweet spirit base.
That is why we use Honey Spirit Apple ENTUZIAST.
Apple gives the drink a clear fruit direction, but the distillate itself does not behave like a liqueur.
This allows the cocktail to remain relatively dry and mature.
That is especially important because the apricot component already brings softness.
Kherson Sun Recipe
- 50 ml Honey Spirit Apple ENTUZIAST;
- 20 ml apricot cordial;
- 15 ml fresh lemon juice;
- 70–90 ml well-chilled soda water;
- plenty of ice;
- a thin slice of apricot or lemon peel for garnish.
If desired, the apricot cordial can be replaced with peach cordial.
But the original version is built around apricot.
How to Make Kherson Sun
- Thoroughly chill a tall Highball or Collins glass.
- Fill the glass with large ice cubes.
- Add 50 ml Honey Spirit Apple ENTUZIAST.
- Pour in 20 ml apricot cordial.
- Add 15 ml fresh lemon juice.
- Stir gently.
- Top with 70–90 ml very cold soda water.
- Give the drink one light final stir.
- Garnish with a thin slice of apricot or a strip of lemon peel.
Why Apricot?
Apricot has a very distinctive southern character.
It is aromatic, warm, soft and still capable of feeling fresh.
It does not carry excessive tropical sweetness.
That is exactly what we need.
It complements the apple base without simply repeating it.
Apricot or Peach?
Both work.
Apricot gives a brighter, slightly more acidic and more complex profile.
Peach makes the cocktail softer, rounder and more aromatic.
If you want a drier and more gastronomic character, choose apricot.
If you want a softer and more summery version, choose peach.
What Is Apricot Cordial?
A cordial allows you to create a more concentrated fruit flavour than ordinary juice.
For Kherson Sun, we do not want a thick sweet syrup.
The ideal cordial should combine ripe apricot aroma, moderate sweetness and light acidity.
It should support the fruit character rather than dominate it.
A Simple Homemade Apricot Cordial
- 100 g ripe apricot;
- 50 ml water;
- 25–30 g sugar;
- a few drops of lemon juice.
Crush the apricot, combine it with water and sugar, warm gently and then strain.
Once chilled, adjust the acidity with a little lemon juice if necessary.
The cordial should not taste like jam.
Why Lemon?
Without lemon, the cocktail would quickly become too soft.
Apple and apricot both have a rounded fruit character.
Lemon creates the necessary line of acidity.
Fifteen millilitres is enough to freshen the drink without turning it into a Sour.
Why Soda Water?
Soda gives the cocktail air.
It makes the drink lighter, longer and more refreshing.
Without soda, Kherson Sun would feel considerably denser and sweeter.
And we want a drink associated with sunlight, not a fruit dessert.
Can You Use Ginger Beer?
You can, but it moves the recipe in a completely different direction.
Ginger quickly becomes a dominant flavour.
Kherson Sun should remain fruity and sunlit.
That is why the original version uses neutral soda water.
What Colour Should It Be?
Pale gold with a warm orange tone.
Not bright orange.
Not opaque.
And definitely not artificially coloured.
The drink should look as if the colour came from sunlight itself.
What Should Kherson Sun Taste Like?
Apple should appear first.
Then comes apricot.
Lemon adds fresh acidity.
Soda makes the flavour longer and lighter.
The finish should remain fruity but dry.
Without sticky sweetness.
Should the Cocktail Be Sweet?
No.
It can have fruit softness, but not dessert sweetness.
If your apricot cordial is very sweet, reduce it to 15 ml.
If the fruit is naturally tart, keep it at 20 ml.
The balance should always be adjusted to the specific cordial you use.
Can You Use Fresh Apricot Juice?
Yes.
The cocktail will then be lighter and less concentrated.
You can use around 30 ml of fresh apricot juice or purée.
In that case, you may need to slightly adjust the amount of lemon.
Why a Tall Glass?
Because Kherson Sun is a long cocktail.
It needs ice, space and bubbles.
A tall clear glass shows the golden colour and the movement of carbonation beautifully.
This reinforces the feeling of lightness.
How Should the Cocktail Be Garnished?
Very simply.
A thin slice of apricot or peach.
Or a long strip of lemon peel.
There is no need for a large fruit arrangement.
The drink is expressive enough on its own.
Can You Add Herbs?
Yes, but carefully.
One small sprig of thyme or basil can support the fruit profile in an interesting way.
But too much greenery will change the personality of the drink.
Apple and apricot should remain the main aromatic direction.
Kherson Sun or Dnipro Current?
Both cocktails are bright, long and fruit-driven.
But their personalities are very different.
Dnipro Current is built around green apple, lime and ginger.
It is sharper, cooler and more dynamic.
Kherson Sun is softer, warmer and more ripe in aroma.
Here, apple is paired not with ginger but with apricot.
Kherson Sun or Apple Honey Highball?
The obvious connection is Honey Spirit Apple.
But Apple Honey Highball is much simpler in structure: apple distillate, citrus and soda.
Kherson Sun adds a separate fruit layer through apricot or peach.
That makes it more aromatic, richer and more distinctly southern.
What Food Goes Well with Kherson Sun?
The fresh fruit character works well with lighter food.
Soft cheeses, poultry, grilled vegetables, light salads and fish are all good choices.
Dishes with subtle fruit sauces can also work very well.
Very sweet desserts are better avoided because they can make the cocktail feel less expressive.
When Is the Best Time to Serve It?
On a warm day or in the early evening.
On a terrace.
Outdoors.
Somewhere with plenty of light.
This is a cocktail that almost asks for sunshine.
Why Kherson?
Because for this city we wanted to express the southern character not through literal symbols, but through warmth.
Sun.
Ripe fruit.
Open air.
Lightness.
Those sensations became the foundation of the recipe.
Kherson Without the Tourist Postcard
We did not try to put “everything southern” into one glass.
No watermelon, grapes, peach, apricot and five other fruits all at once.
That would have been too literal.
Apple, apricot, lemon and light are enough.
Sometimes a few precise associations work better than an entire catalogue of symbols.
From Spring Blossom to Southern Sun
The previous cocktail in the collection — Uzhhorod Blossom — was light, pink and floral.
Kherson Sun keeps the sense of lightness but changes the aromatic direction.
Raspberry becomes apple.
Flowers become apricot.
Sparkling wine becomes soda.
Pink spring light becomes warm golden-orange sunlight.
