A city can stand beside a river. Or it can live together with it.

For Dnipro, the great river is more than part of the landscape. It defines the scale of the city, creates a sense of open space and brings the feeling of constant movement.

Movement became the central idea behind the fourth cocktail in our signature “Entuziast — Cities of Ukraine” collection.

Dnipro Current is a bright, fresh and dynamic cocktail built around Honey Spirit Pure Entuziast, apple cordial, lime and ginger beer.

There is no heavy oak ageing here, no dark coffee character and none of the citrus bitterness that defined some of the previous cocktails.

Instead, we have clean honey distillate, fresh apple, bright lime acidity, the spicy energy of ginger and cold carbonation.

This is a cocktail about flow.

About water that never truly stands still.

The Fourth City — A New Character

With the “Cities of Ukraine” collection, we deliberately avoid creating one cocktail and simply changing its name and garnish.

Each city should change the logic of the recipe itself.

Kyiv Golden Hour is strong, golden and unhurried.

Lviv Coffee & Honey is dark, coffee-driven and designed for the evening.

Odesa Sea Breeze is dry, citrus-forward, cool and maritime.

Dnipro Current should feel like movement.

That is why it is tall, cold, carbonated and full of energy.

Why Honey Spirit Pure?

For this cocktail, we did not need an aged spirit base.

Quite the opposite.

We wanted a clean distillate that would allow the apple, lime and ginger to remain bright and expressive.

That is why we chose Honey Spirit Pure Entuziast.

This honey distillate does not carry a heavy oak character, making it particularly well suited to fresh, long cocktails.

It provides the alcoholic structure without trying to overpower the other ingredients.

And that kind of clarity was exactly what we needed for our interpretation of a “current”.

Dnipro Current Recipe

  • 50 ml Honey Spirit Pure Entuziast;
  • 20 ml apple cordial;
  • 15 ml fresh lime juice;
  • 80–100 ml well-chilled ginger beer;
  • plenty of ice;
  • a thin slice of green apple or lime peel for garnish.

The recipe is deliberately concise.

There is no need to build this cocktail from ten different ingredients.

In Dnipro Current, every component has a clear purpose: Honey Spirit provides the foundation, apple gives the fruit character, lime brings acidity, ginger provides energy, and carbonation creates movement.

How to Make Dnipro Current

  1. Thoroughly chill a tall, clear Highball or Collins glass.
  2. Fill it almost to the top with large ice cubes.
  3. Add 50 ml Honey Spirit Pure Entuziast.
  4. Pour in 20 ml apple cordial.
  5. Add 15 ml fresh lime juice.
  6. Gently stir the ingredients with the ice.
  7. Top with 80–100 ml very cold ginger beer.
  8. Give the drink one or two gentle lifts with a bar spoon from the bottom upwards.
  9. Garnish with a thin slice of green apple or a piece of lime peel.

There is no need to stir the finished cocktail aggressively.

We want to preserve as much carbonation as possible.

What Is Apple Cordial?

We could simply add apple juice.

But that would make the cocktail more diluted, sweeter and less structured.

A cordial allows us to create a more concentrated apple flavour while controlling both sweetness and acidity.

For Dnipro Current, we are not looking for cooked apple, caramel or apple pie flavours.

The ideal direction is fresh green apple.

Crisp, aromatic and slightly tart.

Simple Apple Cordial for a Homemade Version

The easiest version can be prepared with fresh apple juice.

  • 100 ml fresh clarified apple juice;
  • 20–25 g sugar;
  • a small amount of citric acid or fresh lemon juice.

Gently warm part of the juice, dissolve the sugar in it and combine it with the remaining cold juice.

Then adjust the acidity very carefully.

The cordial should remain primarily apple-driven.

The acidity is there only to make the flavour brighter.

Why Green Apple?

A sweet red apple can also be used, but it changes the personality of the drink.

Green varieties support the concept of Dnipro Current more naturally.

They create a stronger impression of freshness, crispness and acidity.

Combined with lime and ginger, they produce a much cleaner flavour profile.

The cocktail should remind you of a fresh apple, not an apple dessert.

Why Lime?

Apple creates the fruit foundation, but lime gives the recipe direction and definition.

Its acidity feels greener and more aromatic than ordinary lemon.

It pairs naturally with both apple and ginger.

Fifteen millilitres is enough to keep the cocktail bright and refreshing without turning it into a Sour.

Why Ginger Beer?

Ginger has a special role in this cocktail.

If apple creates the flavour and lime provides freshness, ginger is responsible for the sensation of movement.

Its subtle heat arrives after the first fruity wave and continues into the finish.

The carbonation of ginger beer makes the cocktail feel even more dynamic.

That is why we chose ginger beer rather than ordinary soda water.

Ginger Beer or Ginger Ale?

For the original version — ginger beer.

It usually has a stronger ginger character, more spice and less of the impression of ordinary sweet soda.

Ginger ale can also be used.

In that case, the cocktail becomes softer, sweeter and simpler.

It is a perfectly acceptable variation, but it moves slightly away from the original idea of Dnipro Current.

Won't the Cocktail Be Too Sweet?

It should not be.

That is why two things need to be controlled: the sweetness of the apple cordial and the particular ginger beer you use.

Some ginger beers contain a considerable amount of sugar.

If you are using a sweeter version, reduce the apple cordial from 20 ml to 15 ml.

If the ginger beer is dry and spicy, 20 ml of cordial should work well.

Balance is always more important than mathematical precision in a cocktail recipe.

Can You Use Regular Apple Juice?

Yes, if you do not have apple cordial.

In that case, use approximately 30 ml of good-quality apple juice.

The result will be lighter and less concentrated.

You may also need to adjust the amount of lime slightly depending on the natural acidity of the apple juice.

It is a simpler homemade version, but the central idea of the cocktail remains intact.

What Should Dnipro Current Taste Like?

The first sip should be exceptionally cold and fresh.

Green apple appears first.

Then comes the clean alcoholic foundation of Honey Spirit.

Lime introduces bright acidity.

And only after that does the ginger gradually emerge.

It creates a subtle warmth and spicy sensation that contrasts with the cold temperature of the drink.

That contrast is one of the details that makes the cocktail interesting.

A Cold Cocktail with a Warm Finish

Dnipro Current is built around a small contradiction.

Visually and during the first moments of flavour, it feels exceptionally cool.

A clear glass, ice, a pale drink and green apple.

Then the ginger arrives and leaves a warm, tingling finish.

Cold and warmth exist at the same time.

This creates a sensation of movement even within the flavour itself.

Why a Tall, Clear Glass?

Presentation is part of the concept of Dnipro Current.

We need a tall, transparent glass in which the ice, bubbles and drink itself remain clearly visible.

Ideally, streams of carbonation should constantly rise between the ice cubes.

That becomes our small visual interpretation of the “current”.

A heavy Rocks glass or a small coupe would not communicate the idea in the same way.

What Kind of Ice Should You Use?

Large, clear cubes.

And plenty of them.

As with other Highballs, a generous amount of well-frozen ice helps maintain a low temperature for longer and slows unwanted dilution.

The cocktail should remain cold from the first sip to the last.

How Should Dnipro Current Be Garnished?

The most obvious — and probably the best — choice is a thin slice of green apple.

It can be placed along the inside wall of the glass so that it almost becomes part of the visual flow.

A second option is a long, thin piece of lime peel.

But our usual rule still applies: do not turn the cocktail into a fruit arrangement.

One clear accent is enough.

Can You Add Mint?

Yes, but very carefully.

One small sprig of mint can add a fresh aromatic note.

If you add a large amount of mint and muddle it aggressively, Dnipro Current begins moving towards Mojito territory.

That is not what we want.

Apple and ginger should remain the main aromatic accents.

Dnipro Current vs Honey Ginger Buck

These cocktails do share several ingredients.

Both use Honey Spirit Pure, lime and ginger beer.

But in Honey Ginger Buck, the combination of honey distillate, lime and ginger is the central idea of the recipe.

Dnipro Current introduces another complete flavour layer — green apple.

It makes the cocktail fruitier, brighter and changes the overall composition.

Dnipro Current or Odesa Sea Breeze?

At first glance, the two cocktails may appear similar.

A tall glass, plenty of ice, carbonation and a refreshing presentation.

But that is almost where the similarities end.

Odesa Sea Breeze is built around MeadGIN, grapefruit, lemon, soda water and an almost imperceptible touch of salt.

Its character is dry, citrus-driven and maritime.

Dnipro Current uses Honey Spirit Pure, apple, lime and ginger beer.

It is fruitier, spicier and more energetic.

What Food Goes Well with Dnipro Current?

The fresh apple and ginger character works particularly well with lighter food.

Soft cheeses, poultry, light meat appetisers, grilled vegetables and mildly spicy dishes are all good choices.

Ginger also allows the cocktail to pair with certain Asian dishes, especially when they are not excessively hot.

Very sweet desserts, on the other hand, can make the apple component feel less expressive.

When Should You Serve Dnipro Current?

This is a versatile cocktail for a warm afternoon or evening.

It feels light enough for a terrace, while the ginger gives it enough character to remain interesting after sunset.

It works particularly well when served extremely cold.

Why Dnipro?

We did not want to rely on literal symbols of the city.

The starting point was the principle of movement itself.

The great river divides the urban landscape and, at the same time, connects it.

The water is always moving, even when it appears almost motionless from the shore.

That is the feeling we tried to translate into the cocktail.

Bubbles move between the ice.

The flavour moves from apple to lime, and from lime to ginger.

Cold gives way to a warm ginger finish.

Nothing remains completely static.

From the Sea to the River

The previous cocktail in our collection — Odesa Sea Breeze — was inspired by the feeling of the sea, open air and space.

Water remains part of the story, but its character changes.

Odesa is a breeze.

Dnipro is a current.

There — grapefruit, salt and sea air.

Here — apple, lime, ginger and movement.

Dnipro Current is a cocktail about movement.

Honey Spirit Pure creates a clean alcoholic foundation. Green apple adds a fresh fruit character. Lime brings acidity, while ginger beer contributes spice, bubbles and a long ginger finish.
