After the concrete, glass and geometry of Kharkiv, we wanted to bring colour back into the collection.

But not bright colour.

Not summer colour.

Not something light.

We wanted deep ruby, tartness, dry herbs, cold air and the feeling of an old city with a long memory.

That is how Chernihiv Blackthorn appeared — the sixth cocktail in the signature “ENTUZIAST — Cities of Ukraine” collection.

Its foundation is MeadGIN Sloe Blackthorn ENTUZIAST — a berry-driven gin based on honey distillate and blackthorn.

To it, we add dry vermouth, bitters and just a small amount of soda water.

The result is a dark, tart, herbal and deliberately restrained cocktail.

Why Blackthorn?

Blackthorn is a berry with character.

It does not try to be easy or sweet.

It brings tartness, acidity, a dark berry aroma and an almost wild natural quality.

That is exactly why it fits the image of Chernihiv so well.

We were not looking for fruity brightness here.

We wanted depth.

Dark colour.

Dryness.

A certain severity.

And a long finish.

Why Blackthorn ENTUZIAST?

For this cocktail, we needed a base spirit that already had a pronounced berry character of its own.

That is why we use MeadGIN Sloe Blackthorn ENTUZIAST.

Blackthorn is not just a supporting note here.

It forms the centre of the flavour.

Compared with classic dry MeadGIN, Blackthorn brings a darker colour, berry tartness and a softer roundness.

But we do not want to turn it into a sweet berry cocktail.

That is why the remaining ingredients are chosen to preserve dryness and structure.

Chernihiv Blackthorn Recipe

  • 45 ml MeadGIN Sloe Blackthorn ENTUZIAST;
  • 20 ml dry vermouth;
  • 2 dashes aromatic or herbal bitters;
  • 30–40 ml well-chilled soda water;
  • ice;
  • a strip of orange or lemon peel for garnish.

Soda is used only in a small amount.

This is not a Highball.

Its purpose is to open the aroma slightly and make the cocktail a little lighter without turning it into a long carbonated drink.

How to Make Chernihiv Blackthorn

  1. Chill a small Rocks glass or short Highball.
  2. Fill the glass with large ice cubes.
  3. Add 45 ml MeadGIN Sloe Blackthorn ENTUZIAST.
  4. Pour in 20 ml dry vermouth.
  5. Add 2 dashes of aromatic or herbal bitters.
  6. Stir gently.
  7. Top with 30–40 ml very cold soda water.
  8. Stir once more with one or two gentle movements.
  9. Finish with a thin strip of citrus peel.

Why Not Use Sweet Vermouth?

At first glance, sweet red vermouth may seem like the natural partner for a dark berry spirit.

And that is exactly why we avoid it.

Blackthorn already brings fruitiness and natural roundness.

Sweet vermouth could easily make the cocktail too soft and liqueur-like.

Dry vermouth contributes wine structure, herbal character and dryness.

It keeps the berry profile mature and restrained.

Why Add Bitters?

Blackthorn provides the berry character.

Dry vermouth contributes wine and herbs.

Bitters connect these two worlds.

They add spice, bitterness and complex botanical nuances.

Aromatic bitters with spicy and woody notes work particularly well here.

Herbal bitters make the drink even drier and more austere.

Both approaches are valid.

Why Just a Little Soda?

Because this cocktail needs air.

Without soda, Blackthorn, dry vermouth and bitters create a very dense composition.

A small amount of carbonated water opens the aroma, slightly reduces the strength and lengthens the finish.

But it is important not to overdo it.

If you add 100–150 ml of soda, the drink becomes too light and loses its character.

We are not making a Spritz here.

We only want to loosen the structure slightly.

What Colour Should It Be?

Deep ruby.

Not opaque.

Not bright red.

In good light, the cocktail should show a deep garnet tone.

Colour is one of the key visual elements of Chernihiv Blackthorn.

After the almost colourless Kharkiv Constructivist, it should feel like a sudden change of scene.

What Should Chernihiv Blackthorn Taste Like?

The first aroma should be dark berry and citrus oil.

The first sip should be dry and tart.

Then the blackthorn character appears.

After that comes the herbal quality of the vermouth.

Bitters introduce a spicy and slightly bitter layer.

Soda makes the flavour longer and a little lighter.

The finish should leave behind berry, dry herbs and subtle bitterness.

Should the Cocktail Be Sweet?

No.

This is essential.

Blackthorn may create a sense of berry softness, but the finished cocktail should remain dry.

If your particular Blackthorn feels especially soft or sweet, you can slightly increase the amount of dry vermouth.

If it is very tart, reduce the vermouth to 15 ml.

Balance matters more here than rigidly following the numbers.

Why Not Add Berry Syrup?

Because the berry is already present in the base spirit.

Adding syrup would duplicate the same flavour direction.

The cocktail would become sweeter, simpler and less structured.

We would rather show Blackthorn as a complete spirit base than use it merely as a berry flavouring.

Can You Add Fresh Berries?

Technically, yes.

But we would not use them in the original version.

Fresh berries can add unnecessary fruitiness, acidity and cloudiness.

They also push the presentation in a more decorative direction.

Chernihiv Blackthorn should remain restrained.

Lemon or Orange Peel?

Both can work.

Lemon peel makes the aroma feel drier and fresher.

Orange peel gives a warmer, softer and more rounded aromatic impression.

If you want to preserve the northern, more austere character, choose lemon.

If you want to soften the profile slightly, choose orange.

Which Glass Should You Use?

A short, clear Rocks glass is one of the best choices.

The cocktail can be served over one large ice cube.

This makes the deep ruby colour particularly visible.

A short Highball can also work if you prefer slightly more soda.

A tall Collins, however, would make the drink feel too light.

Why Use One Large Ice Cube?

Because it melts slowly.

The cocktail gradually becomes softer without losing its structure too quickly.

A large, clear cube also works beautifully with a dark ruby drink.

It emphasises the depth of colour and makes the presentation more restrained.

Chernihiv Blackthorn or Sloe MeadGIN Negroni?

Both cocktails use a blackthorn-based spirit.

But their logic is different.

In Sloe MeadGIN Negroni, Blackthorn works together with sweet vermouth and a bitter red aperitif.

The result is denser, richer and more classically bitter-sweet.

Chernihiv Blackthorn, by contrast, uses dry vermouth and a small amount of soda.

It is lighter, drier and more herbal.

How Is It Different from Kharkiv Constructivist?

In almost every way.

Kharkiv Constructivist is pale, almost transparent, dry and geometric.

Chernihiv Blackthorn is dark, berry-driven and more earthy.

In Kharkiv, juniper, dry vermouth and a line of lemon dominate.

In Chernihiv, blackthorn comes to the foreground, while herbs and bitters support it.

What Food Goes Well with Chernihiv Blackthorn?

The tart berry profile works particularly well with rich foods that are not excessively sweet.

Aged cheeses, duck, cured meats, pâtés, nuts and dishes with subtle smoky notes are all good choices.

Mushrooms and roasted vegetables can also be interesting pairings.

Very sweet desserts may make the cocktail feel too soft and hide its dryness.

When Should You Serve This Cocktail?

In the evening.

It is not as heavy as a classic Negroni, but it is also not as light as a Highball.

It works well as a bridge between an aperitif and a quiet evening cocktail.

It is especially appealing in cooler weather.

Why Chernihiv?

Because we wanted to combine two impressions.

The first is the depth of an old city.

The second is a northern natural character.

Blackthorn became the perfect connection between them.

Dark berry.

Tartness.

Dryness.

A slightly wild note.

It does not make the cocktail literally “historical”.

But it helps create the right atmosphere.

Chernihiv Without Theatricality

It would have been very easy to build the drink around antiquity, monasteries and direct historical symbols.

But that would have been too literal.

We are more interested in the feeling.

Stone.

Cold air.

Dark berries.

Dry herbs.

Deep ruby colour.

And the sense that the city has existed far longer than a single human evening.

From Geometry to Deep Ruby

The previous cocktail in the collection — Kharkiv Constructivist — was built around minimalism and geometry.

An almost colourless drink, MeadGIN, dry vermouth, herbal bitters and one line of lemon.

In Chernihiv, the form remains restrained, but the colour and flavour become much deeper.

Transparency becomes ruby.

Juniper becomes dark berry.

The lemon line becomes the tart finish of blackthorn.

A different language, but the same logic of the collection.
